Sticky toffee muffin with cappuccino

Today has been an insanely busy day no time to eat or shoot properly. Just stopped off for a coffe and a snack at Costa in Guildford before I meet a friend for drinks and discovered this amazing treat.
Sticky toffee muffin, sweet, soft, gooey and totally tasty it didn't last as long as it took to edit this photo on my iPad. Certainly one to try again and again.
Back to proper home created treats tomorrow.

Chicken breast with spinach and tagliatelle



Chicken breast with spinach and tagliatelle,cooking this evenings dish and the Stilton and pastrami on rustic roll I posted at lunch time have taught me two lessons, one editing and posting on a computer you are not used to using and with inadequate software is really frustrating and two working in a kitchen much larger and well equipped than mine will stress me out tomorrow when I am back at home. One win one loose I guess.

Tonight's dish was really simple and the kids loved it as did I, start by roasting the chicken breast I did 25 minutes at 180c in a fan assisted oven, season the breasts and add a little chicken stock to the roasting tray. Don't turn, don't touch it, don't mess with it this is simple cooking.

Tagliatelle, I could claim to have made this myself and someone would believe me, however, this is from Sainsbury's Fresh Pasta range, once your chicken has been in for about 15 minutes add your tagliatelle to a large pan of boiling water for as long as it says on the packet, usually 4 minutes. Once cooked drain, drizzle with a little Olive Oil sill in the colander cover the colander to keep warm.

Add a lump of butter to the pan you boiled the pasta in and allow to melt, add the spinach and a good pinch of freshly ground black pepper and wilt until it looks cooked, be careful this will only take 2 minutes max.

Once the chicken is cooked, you'll now it's ready because it will have been in for 25 minutes and be firm to the touch take it out and allow to rest whilst you serve the tagliatelle and spinach. Just look at the photos to see how I do it.

Stilton and pastrami on rustic roll

Two of my favorite things sandwiched into a crusty rustic roll, I love the creamy texture and sharp veins of Stilton and especially when combined with delicious rare Pastrami. This is a particularly good sandwich as the tomato cuts through the creamy Stilton.

italian bread and cabbage soup




Italian bread and cabbage soup this is a fabulous recipe I found on a Jamie Oliver show, its not like any soup I've ever tried before in fact I'm not even sure I made it properly but it tastes great.

I just follow Jamie's recipe with a few amendments I didn't use sourdough bread I used a regular crusty white loaf it still tasted great, I used Mozzarella not Fontina they have a very similar taste and texture when cooked and mozzarella is much cheaper and I used less stock because I just didn't have the space and it was still great.

Probably because I did not use all the stock mine did not come out swimming in the 'soup', however, the bread was lovely and soft and full of soup the cabbage still had some bite and a lovely flavour and the anchovies, bacon and cheese gave it a beautiful deep, salty, smoky flavour.

Bacon with corn fritters and pasta bake




Bacon with corn fritters and pasta bake not in any way a traditional Sunday lunch but what the kids wanted and they cleaned the plates.

As with all of my recipes this one is really simple and pretty quick to prepare, the bacon is simply grilled as you like it, my lot like it fairly crispy as do I whilst that is cooking you can make the corn fritters.

Pasta bake is my recipe although recipe might be stretching the word a little, start with these ingredients;

1 breakfast bowl f dried pasta

1 large handful of grated cheddar cheese

1 large handful of grated mozzarella

1 packet cheese sauce

boil the pasta until it is almost cooked, drain and place in a small to medium sized baking tray. Make the packet sauce as per the instructions and pour over the pasta, add most of the cheese and mix everything together in the tray. Top with remaining cheese and back for 10 minutes at 200c.


Totally tasty and filling but the thing for a less than fabulous Sunday and especially after you've frozen for couple of hours at the playground.

Coley wrapped in proscuitto with asparagus and basmati rice




Coley a fantastic fish and cheep too, part of the Cod family but a third of the price a very versatile for cooking. I tried this for the first time and the kids loved it, I wrapped the pieces of fish in proscuitto and pan fried in a little olive oil. This fish came out soft and succulent with a salty crispy coating, served with beautifully tender iron rich asparagus and some simple basmati rice.


The whole meal for four of us came to less than £10, the kids loved it and it is so easy and quick to cook

Spicy tomato wheat chrunchies


Spicy Tomato Wheat Crunchies I've not had these for years, spotted them whilst shopping with the kids this morning and had to let them experience the flavour, aroma and most importantly crunch of these classic snacks. Bonus they come with their equally tasty sibling Bacon Wheat Crunchies, paired with a ham and cheese bagel and refreshing cucumber.
