Coley wrapped in proscuitto with asparagus and basmati rice




Coley a fantastic fish and cheep too, part of the Cod family but a third of the price a very versatile for cooking. I tried this for the first time and the kids loved it, I wrapped the pieces of fish in proscuitto and pan fried in a little olive oil. This fish came out soft and succulent with a salty crispy coating, served with beautifully tender iron rich asparagus and some simple basmati rice.


The whole meal for four of us came to less than £10, the kids loved it and it is so easy and quick to cook
