Potato gnocchi with pesto, courgette and milano salami, what a fabulously tasty, totaly filling and ridiculously easy meal for any day of the week.
You can make your own gnocchi it's pretty simple and quite fun, however I'm tight on time so by pre-made from my local store, cook as per instructions on the packet. Once the gnocchi is cooked add a little olive oil to the pan and drop the gnocchi back in tossing in oil, now add your home made or shop bought pesto and stir gently until all of the gnocchis are covered.
Whilst the the gnocchis are cooking take one courgette and ribbon with a potato peeler and sauté in a little olive oil until golden and crispy, rest on some kitchen towel to absorb the excess oil.
Once everything is ready serve the gnocchi and pesto in a bowl and top with some parmesan shavings, pile the courgette ribbons on a side plate and dress with a little freshly squeezed lemon juice and finally open a packet of miano salami
There all ready to eat, a fabulous meal for two with a great bottle of wine.
