Eggs Benedict



Eggs Benedict, this wasn't the post I planned for today however, due the marvel that is South West Rail it made a great back up, This truly classic dish more normally seen for brunch has so many great features crisp toasted English muffin, smoked ham, soft warm poached egg and smooth hollandaise sauce topped with a sprinkling of chopped tarragon.


There are dozens of recipes for this dish on the net, I'd suggest having a good search around to find the one that best suits you, as much as I love bacon I don't want it in my Eggs Benedict. Many people make their own hollandaise and although I haven't I'm sure it gives you more control over the flavour, which ever way you make it please give this fabulous dish a try.
