Bangers and Mash with Onion Marmalade
A proper old classic tonight inspired my visit to the farmers market in Romsey of Sunday and my introduction to Onion Marmalade my the very clever people at The Chilli Jam Company, thanks Alex.
This rich sweet marmalade works brilliantly with sausage and mash as well as a whole host of other savoury dishes such as cheese and marmite toasted sandwiches, ham sandwiches and pork dishes. You can find it at farmers markets as well as their online store and some Waitrose stores.

Ingredients
Cooking time: 45 minutes | Serves: 1
- 4 Sausages or as many as you eat
- 2/3 medium potatoes
- 1 Jar onion marmalade
- butter, single cream or milk and seasoning

Method
Peel and cut potatoes into chunks all approximately the same size and place into a large pan of cold water. Bring to the boil and simmer until you can push a knife through with minimal pressure.
Whilst the potatoes are cooking grill, bake or fry the sausages until rich and golden. Check that they are cooked all the way through and piping hot
Once the potatoes are cooked drain and place back in the pan on the heat to dry out. Once they are dry place into a potato ricer (best way to get lump free mash) and rice back into pan, if you do not have ricer leave potatoes in pan and crush slightly with a masher, add 25-50ml of single cream (its a taste thing) and a large nob of butter, cover over and leave for 5 - 10 minutes.
Mash (no ricer) or mix the remaining butter and cream into the potato until smooth and creamy
Serve up with a big portion of Onion Marmalade
