Haddock with potatoes apd mange tout
A simple, tasty, healthy dinner tonight with the kids and it went down a treat with two out of three which, will do me.
The fish was simply steamed with a little seasoning, the potatoes were boiled and then tossed in olive oil with with crispy bacon and the dish finished with steamed mange tout. Nothing fancy here just a good healthy meal with lots of flavour.

Ingredients


Cooking time: 45 minutes     Serves: 3

- 400g Haddock fillets, steamed
- 1 packet Mange tout, steamed
- 300g Timed Jersey royal potatoes, boiled
- 3 rashers Smokey bacon, gilled
- Olive oil


Method

  • Grill bacon until crispy
  • Boil potatoes for 6-7 minutes and drain. Warm olive oil in the potato pan, add the bacon and potatoes place lid on and toss. Set aside.
  • Steam the seasoned Haddock for 5-7 minutes or until moist and flaky
  • Steam mnge tout for 3-4 minutes whist Haddock is cooking
  • Plate up, drizzle mange touch with warm olive oil.
