Southern Beach Black Bean Soup
A brief one tonight from the recipe book of Nigella Lawson (Nigella Bites), when I first heard I was going to have soup made from leftover stock, black beans, lime juice and garnished with sour cream I was less than convinced, how wrong was I. This rich dark full bodied soup with sweet, sour, salty flavours a smooth edge from the sour cream and a light fresh note from the coriander garnish is fantastic and ever so moorish.
If you get around to making this soup you'll have already made the Coca Cola Ham and will probably have fallen in love with it, everyone does. Well this is just another reason to make the ham so you can he the soup.
