Roast Partridge

Roast Partridge, this was a first for me and a bird I've wanted to try for a while, sadly it didn't work for me. This may be down to my poor cooking skills but I found some parts of the bird over cooked (the legs) and other slightly too rare even for me. The flavour was as it should be rich, 'gamey' and full and the bird was nicely seasoned (needs a good pinch of salt whilst cooking) but the texture over all was just not good.

I'll certainly give it another try but after some better research into how to cook Partridge.
