Potato gnocchi with pesto, courgette and milano salami
Potato gnocchi with pesto, courgette and milano salami, what a fabulously tasty, totaly filling and ridiculously easy meal for any day of the week.
You can make your own gnocchi it's pretty simple and quite fun, however I'm tight on time so by pre-made from my local store, cook as per instructions on the packet. Once the gnocchi is cooked add a little olive oil to the pan and drop the gnocchi back in tossing in oil, now add your home made or shop bought pesto and stir gently until all of the gnocchis are covered.
Whilst the the gnocchis are cooking take one courgette and ribbon with a potato peeler and sauté in a little olive oil until golden and crispy, rest on some kitchen towel to absorb the excess oil.
Once everything is ready serve the gnocchi and pesto in a bowl and top with some parmesan shavings, pile the courgette ribbons on a side plate and dress with a little freshly squeezed lemon juice and finally open a packet of miano salami
There all ready to eat, a fabulous meal for two with a great bottle of wine.

A busy day finishing things off for my current job and starting to look for my next job, out tonight at SMUG in Brighton for an interesting talk. A massive ciabatta for lunch as I'll not be eating again today. No magic to this just use the best freshest ingredients especially the salad, no one likes soggy, limp salad.

Fishcakes with sesame noodles and cucumber
A super simple dish today after the fun of yesterday, Cod Fishcakes with egg noodles dressed with toasted sesame oil and sesame seeds and served with cucumber sticks. The garnish is coriander.
This took no time at all to cook and the kids loved it, always good when I can create something that both adults and children can enjoy ad it looks kinda grown up.

Roast beef with mash and veggies
British Beef the finest or meats and especially when it's been roasted to perfection I followed Jamie's recipe which came out fabulously. I served my beef with Hugh Fearnley-Whittingstall's very own perfect mash minus the nutmeg, I'm not a fan of nutmeg and some lovely chantenay carrots and steamed broccoli.
A couple of tips, use a potato ricer for lump free mash, serve with horseradish and finally a great bottle of red.

Belgian white chocolate & blueberry blondie
Delicious, scrumptious, beautiful it was just great it was so great that I had two. Tesco finest Belgian white chocolate and blueberry blondies would make a fabulous desert for two or alternatively a great pick me up for one, I need it really.

Chorizo and pepper wrap
Chorizo and pepper wrap, after a heavy night on the wine, gin, ... I needed something packed full of flavour for lunch. after a trip around my local grocery store I came up with this tasty treat.
the ingredients are;
3 or 4 small Chorizo cooking sausages.
2 peppers colour of your choice
a large handful of grated cheddar, mozzarella or a combination of the two.
1/2 bunch of chopped corriander
2 tortilla wraps
Slice each Chorizo into 8 pieces and add to a hot frying pan with a little vegetable oil, whilst the Chorizo is starting to cook slice the peppers into 1cm squares and add to the pan and fry for 5 minutes. After 5 minutes remove the Chorizo and peppers from the heat and add to a baking tray or a like and cover with the cheese. Place under a hot grill until the cheese has melted, split in two and place on wrap, sprinkle with corriander to taste. At this stage I add a good squeeze of hot chilli sauce and wrap.
it is really easy, really tasty and really filling just what I needed after my indulgent evening. Enjoy
